Harvesting & Storing Mexican Marigolds

Mexican marigolds (Tagetes minuta) are native to South America and related to the marigolds grown in gardens around the world. The Mexican marigold is an annual herb with small, yellow flowers. The foliage from the Mexican marigold is used in a variety of ways, including as a medicinal tea and as a condiment in rice dishes. If you harvest and store the Mexican marigold properly, it will last for several months.
