What Does a Hyssop Herb Plant Look Like?

Hyssop is a culinary herb belonging to the mint family. With a somewhat bitter flavor, hyssop is not often used in modern cooking, though hyssop oil can be found in Benedictine and Chartreuse liqueurs.
  1. Flowers

    • Hyssop plants develop purple or blue flowers in the mid- to late summer. The clusters of small, fragrant flowers attract bees.

    Stems

    • Hyssop stems are slender and firm. They grow to 3 feet on average and support leaves that grow on opposite sides of the stem.

    Leaves

    • Hyssop leaves are small and bright green with thin veins down the center and jagged edges. Shaped like teardrops, the leaves are edible and impart a minty flavor.

    Appearance

    • Hyssop is a dense perennial herb that grows in clusters.

    Dried

    • Dried hyssop is olive green, similar in appearance to dried thyme or oregano. Dried hyssop will smell minty.
