How to Preserve Juniper Berries

Juniper berries are a versatile fruit. They are bitter when fresh, but they can be used as a spice in many foods, commonly with wild game. The berries are also preserved for medicinal purposes as a stimulant and diuretic for home remedies. Preserving juniper berries is a different from other fruits that must be canned to be preserved. Juniper berries must be dried correctly to retain the oil that produces the spice and medicinal qualities.

      Pick your juniper berries from the shrubs and collect them together in a bucket.

      Lay all of your berries in a single layer in the bottom of a bucket or box.

      Set the berries in a dry room at between 65 and 75 degrees Fahrenheit for three weeks.

      Throw out the brown berries, as they have rotted. Get rid the berries with holes in them, since this means they have insects.

      Keep the remaining berries in an airtight jar until you need them.
