Do Bay Leaves Go Bad?

Bay leaves are one of the oldest and most commonly used herbs in the world. Luckily, they are also among the longest lasting, since they are usually only used dried.

    • According to the Still Tasty website, commercially dried spices and herbs, including bay leaves, do not spoil, but they do lose potency over time, so they will not flavor food as effectively as they should. Dried bay leaves can be stored safely for up to three years, but they will lose flavor over time. According to The Kitchn website, a bay leaf's flavor is best a few weeks after drying.

    Flavor Tests

    • To test if your bay leaves are still potent enough to be effective, crush a small amount in your hand, then taste or smell it. If the aroma is weak and the flavor is not obvious, throw it out and buy a new jar. Bay leaves should have a woodsy aroma and flavor and a slight bitterness. The Kitchn also recommends putting a few leaves in a cup of boiling water. If you don't detect a strong aroma, then your bay leaves are past their prime.

    Storage

    • The experts at Still Tasty recommend storing bay leaves and all other dried herbs in a cool, dark cupboard away from direct heat or sunlight. Keeping herbs and spices tightly closed when they are not in use will extend their potency. Freezing is not recommended.
