Ginger, also known as Zingiber officinalis, originated in tropical regions and is still cultivated in China, India, the West Indies and regions of West Africa. Jamaica is known for high-quality ginger root. A rhizome, ginger root has tan skin and a somewhat fibrous white or yellow interior. In ancient times, it was used both to preserve food and to treat stomach ailments. An anti-inflammatory, it is also known to reduce nausea and vomiting. Making tea from the root is easy.

Choose ginger that has smooth skin and is firm to the touch. If it looks dried, wrinkled or gnarly, it is old and will not make good tea.

Wash ginger root, using a vegetable brush if need be, to free crevices of dirt and soil.

Slice ginger root into pieces of 1/8 inch or less.

Pour 2 cups of cold water into a saucepan.

Add the chopped ginger to the water.

Bring the water and ginger to a boil, reduce heat and simmer for 30 minutes.

Pour the mixture through the strainer so that it captures the boiled ginger pieces.

Pour the tea into your cups or mugs and sweeten if desired. Makes two servings.
