A Plant With a Pale Yellow Tapering Root That Is Used as a Vegetable

There are several plants that produce pale yellow, tapering roots that are used as vegetables, including parsnips, beets, carrots and radishes. These root crops are typically cool-weather plants. Add them to your garden in spring or fall. These vegetables have similar needs, so several could share a bed.
  1. Parsnips

    • Parsnips vary slightly in color, from whitish to pale yellow. Older parsnips also begin to develop a yellow coloring. The root vegetable offers a sweet and nutty flavor; however, parsnips need cold weather for proper flavor development. The roots can even be stored in the ground to overwinter, according to the University of Illinois Extension. Select parsnips that have few rootlets. The vegetable does not have to be peeled before use, but parsnips should be cooked before use. Their cooking water can be used in making stock.

    Beets

    • You may be familiar with the more common red-colored beets, but beets come in a variety of colors and shapes. Beets are available in colors such as yellow, white and red-and-white-striped and shapes that include round, cylindrical and flat. "Burpee's Golden" beets are also known as "Golden Globe." "Burpee's Golden" beets turn yellow when you cook them. "Yellow Mangel" has a yellow exterior and white interior. Both of these beets are heirloom varieties. Beets are best when they are 1 to 3 inches in diameter. You can eat all parts of the plant, so try using the greens as well as the root.

    Carrots

    • Orange carrots are commonly found on offer in supermarkets, but carrots in other colors -- including yellow -- are available through farmers' markets, organic produce stores and seed catalogs. "Yellowstone" is a yellow carrot that can reach 8 to 10 inches in length. "Jaune Obtuse de Doubs" has a blunt end, while "Amarillo" is well-suited for dry conditions. "Dragon" is a purplish red carrot with a yellowish interior. According to the Oregon State University Extension Service, orange and yellow carrots gained favor with cooks because they do not impart a strong color when used in dishes. Carrots are also available in several shapes, including round, tapered and cylindrical.

    Radishes

    • In addition to the more usual red radishes with white interiors, heirloom globe radishes with yellow flesh exist. The radish "Zlata" is yellow outside, but white inside. Daikon radishes are often white, but varieties exist with a yellowish color. These Asian radishes are even available in black. Daikon are massive radishes with an elongated, cylindrical appearance, but a rounded form is also available. These radishes can reach 18 inches long.
