How to Grow an Adirondack Blue Potato

The Adirondack blue potato is a hybrid variety that Cornell University developed in 2003. It's a round or oblong potato with blue skin and flesh inside, which is moist and tasty when cooked. This potato is good in a potato salad or as mashed potatoes. If you live in an area where the summer temperature remains mild and your soil temperature doesn't exceed 70 degrees Fahrenheit, the Adirondack blue potato could be a good addition to your vegetable garden.

      Prepare your planting area in early spring and plan to plant chunks of potatoes in March or April. Create rows 24 to 36 inches apart and dig in 1 part of organic compost for every 4 parts of soil. Rake the top level. Make a 3-inch furrow down the center of each row with your hoe.

      Cut Adirondack blue potatoes into pieces, taking care to include at least one eye in each piece.

      Drop one potato chunk every 10 to 12 inches and then fill in the furrow with additional soil and compost.

      Hoe loose soil from the edges of the row into the center after your potato plants emerge as green shoots with leaves. Repeat this process several times during your potatoes' growing season to build up the row by 4 to 6 inches, which protects the forming tubers from sunburn.

      Spread a layer of organic mulch, such as compost, over the growing area after your potato plants are several inches tall.
