Instructions

    • 1

Place beans in a strainer and rinse well. Transfer the beans into a large bowl and fill it with water, being sure the water level is about three inches above the beans. Let the beans soak overnight.

    • 2

Drain the water and rinse the beans well. Put the beans into a glass jar, filling the jar no more than 1/4 full. Sprouts will expand and need plenty of room to grow.

    • 3

Secure cheesecloth over the mouth of the jar, using a rubber band. Turn the jar upside down and shake out excess water, as stagnant water will cause your beans to get soggy and fermented. Avoid setting the jar in hot or cold drafts, or direct sunlight.

    • 4

Rinse the growing sprouts twice daily, by filling the jar with water. Rotate the jar, to assure all the beans get rinsed. Turn the jar upside down and shake out excess water.

Wait for small leaves to grow from the end of your sprouts, usually in three to five days. With your sprouts now ready to eat, allow them to dry on a tray. Place dried sprouts in a covered container and refrigerate. They can be eaten cooked or raw and will last for four to five days.
