How to Grow Ruby Queen Beets

"Ruby Queen" beets are prized for their flavorful, dark red roots and tender, edible foliage. The roots may be steamed, boiled or preserved by canning. The plants grow best when temperatures are cool and can be added to the garden approximately one month before the last anticipated spring frost. Ruby Queen beets thrive in full sun, but also grow in light shade. A fertile soil that retains moisture without becoming soggy produces the best results. The roots of Ruby Queen beets are ready to harvest approximately 60 days after planting.

Instructions

      Broadcast a 3- to 4-inch layer of organic compost over the growing site. Follow with an application of 10-10-10 granular fertilizer. Read the instructions on the fertilizer package to determine how much to apply.

      Till the soil until it is loose to a depth of 12 to 18 inches.

      Use a garden hoe to make rows for planting. Leave a space of at least one foot between the rows.

      Plant Ruby Queen beet seeds one-half inch deep. Allow one inch of space between each seed. Water until the soil feels evenly moist.

      Provide supplemental moisture as needed to keep the soil evenly moist.

      Thin the seedlings when they are 3 inches tall, leaving four inches of space between each one.

      Apply 3 inches of organic mulch after thinning. Keep the mulch at least three inches from the plants.

      Remove weeds that develop around the plants by hand. Eliminate weeds from between the rows, using a garden hoe.

      Apply 10-10-10 fertilizer, in the amount indicated on the package, alongside the seedlings when they reach a height of 6 inches. Keep the granules four to six inches from the plants, and water deeply after the application.

      Harvest the roots of Ruby Queen beets when the surface of the root ball is approximately 2 inches wide. Harvest the foliage when it is 10 to 12 inches tall.
