Wait for the soil to warm to a constant 50 to 80 degrees Fahrenheit before sowing won bok seeds. Turn over the soil with a pitchfork to a 12-inch depth.
Amend the soil if necessary. Like most Oriental leafy greens, won bok prefers a soil pH between 6.0 and 6.8. Test the soil with a kit and add lime to raise a pH below 6.0 or add peat moss to lower a pH below 6.8. Check the manufacturer’s label on the amendment for application instructions.
Press won bok seeds into the soil three to four inches apart. If planting in rows, space each row 12 to 15 inches apart. Water the soil with a garden hose, offering just enough water to dampen, not saturate, the soil.
Thin out the won bok crop about three weeks after planting. Remove enough plants to provide 10 to 12 inches of space between the remaining plants. Discard the pulled plants in a compost or trash bin.
Provide a steady water supply to the won bok plants as they grow. An inch of water per week is sufficient for proper growth. A soaker hose provides the deep watering that the won bok plants need to thrive.
Harvest the won bok between 50 and 80 days after planting, before seed stalks develop. You will know it is harvest time when the won bok heads feel firmly compact. Cut the heads off at the soil line using a sharp knife.
