Green peanuts come straight out of the ground and still hold moisture.
Green peanuts must be refrigerated and are highly perishable. Therefore, this type of fresh, uncooked peanut is available only in the fall, when peanuts are harvested.
Raw peanuts begin as green peanuts but are air-dried rather than kept moist. Because they are dried, they are less perishable than green peanuts.
Raw peanuts are often prepared by soaking, then boiling with water and salt. Boiled peanuts are especially popular in the Southeastern United States.
