How to Pick Porcini Mushrooms

Porcini mushrooms command a high price because they are still considered a "wild" mushroom. Attempts have been made to cultivate the delectable mycelium, but most efforts have been less than successful. Porcinis can often be found alongside roadways and in fallow fields after the fall rains. Porcinis can range in size from 1 to 10 inches tall. The natural smoky flavor of the mushroom makes it a perfect side dish to meats and poultry.

Things You'll Need

  • Sharp knife
  • Paper bag
  • Soft pastry brush

Instructions

      Slice through the stem at ground level to separate the mushroom stem and cap from the underground portion.

      Slice away the outer portion of the bottom stem. This is where dirt and debris are more likely to collect.

      Place the porcinis in a paper bag.

      Refrigerate the porcini mushrooms as soon as possible.

      Wash the porcinis by gently brushing them with a damp pastry brush. Use as soon as possible after harvest.
