How to Store Amaranth Seeds

In ancient Mexico, amaranth seeds were the food of royalty. Yet this plant is little known in the United States. Amaranth seeds are nutritious, nut-like seeds that are the size of poppy seeds. The seed is sometimes classified in health food stores as a grain, vegetable or herb. Unlike cereal grains, amaranth seeds are high in protein and lysine. The seeds may be used like flour and can be mixed in with flour for baking to make breads more nutritious. If properly stored, amaranth will have a shelf life of up to one year.
