What Are the Easiest Vegetables and Herbs to Grow Living in an Apartment?

For some would-be horticulturalists, an extensive garden is not an option. They lack either the time or space, or simply don't have a green thumb. Apartment-dwellers, especially, require something a bit less labor-intensive and more compact, such as an indoor or patio garden. Many herbs and vegetables are rather easy to grow in limited space. Additionally, these plants offer the reward of harvest, can be used in recipes and are often aromatic.
  1. Oregano

      Oregano is simple to grow and easily propagated from seeds or cuttings. It is often sold in grocery stores whole and potted. Oregano seeds should be planted on the soil surface and lightly misted before being covered in plastic and placed in a sunny location. Oregano is drought-resistant and resilient once established.

    Mint

      Mint is hardy and prolific to the point of being invasive in some cases. Mint can be propagated from seed or cuttings. Place mint in a place that receives light shade, especially in the afternoon. Keep the plant moist as it has a tendency to dry out. Thin it regularly to prevent over-spreading.

    Lettuce

      Lettuce and many other leafy greens are simple to grow from seed. Cover the seeds in a shallow layer of soil and mist. Lettuce grows well under grow lights or on a sunny windowsill. It grows quickly and will be ready to harvest, if you so desire, in a matter of weeks.

      Globular varieties of radish are best for the indoor grower, unless you are using a deep container. They are easily propagated from seed. Sprinkle seeds on the soil, cover lightly with soil, mist well, cover in plastic and place in a sunny location. While radishes are hardy, they don't thrive in extreme heat, so keep them out of direct light if it's hot.

      A relative of the mint family, thyme grows well from seed or cuttings and prefers a light, sandy soil and full sun. While hardy, thyme grows slowly in the early stages of its life and so must be protected from frost and weed encroachment. Should you choose to harvest, do so in mid-summer.

      Beans are highly adaptable and very fast growing. They are hardy but dislike frost and cold temperatures. Beans prefer a soil of more-or-less neutral pH value and full sunlight. Some variety of bean is native to all the inhabited continents and they are therefore somewhat variable when it comes to growing pattern. However, growing requirements for the various types are, for the most part, quite similar.
