Measure the length of the celery stalk from the base to the first leaf on the bottom. Harvest the plant when the stalk is between 6 and 12 inches long between base and leaf.

Cut through the stalk with a sharp knife. Remove the entire plant at or just below the soil surface.

Rinse the soil off the stalks with cool running water. Shake the celery dry. Store it in the refrigerator until you are ready to use it.
