My Peaches Are Not Ripening

In the United States, peach season occurs from late June through the month of July in the southern states and during the months of July and August in the north. Peaches are a delicate fruit that require tree ripening for optimal taste and texture. Fruit that has been picked prematurely will not ripen naturally, but will soften enough for consumption or canning, given a little care.
  1. Fruit on the Tree

    • Peaches that are grown close to retailers are usually left on the tree to gain optimum size, texture and flavor. If the fruit comes off the tree with a gentle twist and slight tug, the crop is ready to pick. Examine the base color of differing peach varieties to determine ripeness. Mature peaches turn from green to a combination of orange, yellow or red. Ripe peaches form a slight indentation when pressed and give off a sweet odor that indicates maturity.

    Fruit in the Market

    • Growers who must ship their crop to market over long distances often pick peaches when they are still slightly green. Look for locally grown produce that is labeled, "tree-ripened" to get peaches that are at their best in flavor and texture. Alternatively, look for a local pick-your-own orchard and inquire when the fruit will be ready for picking. Obtaining peaches from a local farmer's market or roadside stand is another good way to ensure that your peaches are ready to eat.

    Gradual Ripening

    • If peaches are not in season in your area and the fruit in your supermarket has been picked early to ensure a longer shelf life for its long travel to market, there are ways that you can accelerate peach softness for eating, baking or preserving. Separate peaches so they are not touching and place them between linen napkins. Your fruit will soften in a few days or, in the case of greener peaches, in up to a week.

    Quick Ripening

    • If the threat of an early frost has necessitated premature picking of a peach crop, or if the peaches you find in the market are too green for you to use immediately, place a few peaches in a brown paper bag. Provide a small opening to allow for ventilation and carefully monitor the fruit for signs of bruising or rotting. This method will give you usable fruit in 24 to 48 hours. Remove softened fruit promptly and use immediately for best results.
