How to Sweeten Blueberries After Harvest

Blueberries do not continue to ripen after being harvested. With a little sugar and some time, you can increase the sweetness of the berries to make even those picked too young more palatable. This method applies to all types of berries picked too soon. After sweetening the blueberries, eat them immediately or freeze them for up to one year.

      Rinse 1 qt. blueberries in a colander.

      Pat the fruit dry with paper towels. Spread the blueberries in a single layer on a baking sheet.

      Evenly sprinkle 3/4 cup sugar over the berries, and stir to combine the berries and sugar. Wait for 10 minutes to allow the sugars to pull some of the juices from the berries.

      Transfer the berries to a freezer container or plastic zipper bag. Fill rigid containers to within 1 1/2 inches from the top. Seal rigid containers with an airtight lid, and completely close zipper bags. Do not cover the berries with anything else in the storage container.
