When Should You Pick Fava Beans?

Fava beans, also called broad beans, are often substituted for lima beans. They prefer cool weather, maturing before the heat of summer. They can be planted as a winter crop in the South.
  1. Seasons

    • Fava beans are usually ready to harvest approximately four to five months after planting. Spring crops planted in February and March will be ready to harvest in June and early July. In warm climates, fall crops planted in October or November will be ready to pick in March or April.

    Shelled Beans

    • Harvest fava beans when the pods are filled out with seeds and have a shiny, green appearance. The beans inside the pods are large and flat. Shell the beans before cooking.

    Edible Pods

    • Pick fava beans young when the pod is to be eaten. At this stage, the pods are just beginning to fill out and the pods are tender and green.

    Dry Beans

    • Pick fully mature for dry use. Fully mature pods are beginning to lose their green appearance and whiten. Leave the pods on the plant and pick them when dry, or pick the mature pods and dry them after picking.
