Growing Ornamental Sweet Potatoes

Ornamental sweet potatoes look much different than the edible varieties. The leaves are either lobed or heart shaped and are so bright they almost look electric. Colors may be deep purple, chartreuse, red, white or bronze and pink. They grow from tubers, or small elongated bulbs, and are propagated by stem cuttings. Ornamental sweet potatoes are edible, but have a bitter flavor and are not usually eaten.

      Cut tubers in sections with a knife. Each section should contain at least one eye, or the area where the sprout emerges.

      Plant the tuber section in the ground or in containers during late spring after any chance of frost is over. Ornamental sweet potatoes are annuals in cold climates and cannot survive cold temperatures.

      Place the tuber pieces in the soil with the eye up and completely cover with more soil. Keep the tubers water and they should sprout in a few days to a few weeks.

      Water plants frequently as they will wilt when dry. They should rehydrate after watering.

      Contain the trailing vines by cutting back whenever needed. Ornamental sweet potato vine grows very fast and takes root wherever it touches the ground.

      Dig tubers up right before the first frost of the season. Set them on newspapers in a cool, dry basement to dry a few days and store in an airtight container filled with peat moss until next spring.
