How to Store Hyacinth Bean Sprouts

Hyacinth bean, or lablab bean, is an attractive flowering vine. Its seeds are often sprouted to make a delicious and nutritious addition to salads, sandwiches and stir-fries. However, the mature seeds that the sprouts spring from are poisonous. Before you store or eat your hyacinth bean sprouts, make sure to eliminate the seeds at the end. Ideally, hyacinth beans should be eaten as soon as they sprout. However, if carefully stored, they can last in the refrigerator for about a week.
