What Is the Non-Stick Coating on All-Clad Cookware?

All-Clad Metalcrafters LLC is the company behind the line of All-Clad cookware. According to the manufacturer, the pots and pans are safe for use on induction ovens and contain a magnetic, stainless steel exterior. The only exception is the Copper-Core pans, which contain a layer of copper. The pots and pans produced by the company have a non-stick coating.
  1. Non-Stick Surfaces

    • According to All-Clad, the non-stick pans are safe for cooking food and safe for use without oil. The company claims that the coating lacks any PFOA gases, which are harmful to humans. The company uses 304 grade stainless steel in the construction of the non-stick surface. The stainless steel has a special coating applied that the company keeps secret, which keeps food from sticking to the bottom of the pans.

    Manufacturer Recommendations

    • All-Clad recommends preheating pans prior to cooking, which reduces any sticking. Turn the heat to low and set the pan on the burner. Gently touch the inside of the pan and when it is warm to the touch, pour a thin layer of cold oil inside. Move the pan around until the oil coats the bottom. Put the food inside the pan once the oil sizzles and avoid moving the food around too much. The pans retain the heat and provide an even cooking surface, but following the recommended method keeps food from sticking to the bottom.

    Cleaning the Non-Stick Pans

    • The LTD, Cop-R-Chef and MC2 line of pots and pans must be washed by hand. The LTD2 and Stainless Steel lines are safe for the dishwasher. The manufacturer recommends washing the pots with warm water and soap because any food left behind might change the color of the pan. The company also recommends Bar Keeper's Friend for food that sticks to the pan. Mix the powder with a small amount of water and rub it onto the food. Wipe off the mixture and rinse with fresh water.

    Non-Stick Care

    • Do not use the non-stick pans in the broiler or left cooking on the stove. The manufacturer warns against cooking in the pans with metal utensils and against cleaning the pans with metallic pads. You should avoid using spray oil, which leaves behind a residue and slowly builds up on the pan, which may cause damage and peeling or flaking. The warranty on the pots and pans does not cover damage caused by misuse. You are responsible for those damages.
