Spray each cloth napkin lightly with spray starch and iron the napkins to remove wrinkles. The starch adds an attractive crispness to the fabric that helps it hold its shape after you fold it into pockets. Allow the napkins to dry and cool after pressing them.
Place an ironed napkin on a flat surface so it looks like a square in front of you. Bring the right edge of the napkin over to the left edge and align the edges precisely. Press the folded edge lightly with your fingers.
Fold up the bottom edge of the napkin about two-thirds of the way toward the top edge and press the folded edge with your fingers. Bring the bottom edge of the napkin up and align it with the edge of the fabric you just folded up.
Turn the napkin over. Fold the left edge over toward the center and press the fold lightly with your fingers. Fold the right edge over toward the center also, but tuck the right edge of the napkin inside the flap of the left edge to secure it. Press the folds lightly with your fingers.
Turn the napkin over again to reveal a pocket. Insert your flatware into the pouch to finish the pocket napkin.
