What Is a Kubbe Attachment for a Meat Grinder?

When you buy a meat grinder or stand mixer, you may discover a round-shaped device known as a kubbe attachment. KitchenAid and several other companies include the device in kitchen appliances, but you also have the option of purchasing the attachment separately when you break yours or the manufacturer does not include the piece.
  1. Kubbe Dish

    • Kubbe is a type of meat-stuffed dish commonly found in Middle Eastern cuisine. Also known as kebba, the dish consists of a warm dough stuffed with meat and other ingredients. Cooks use a combination of bulgur wheat and lamb for the exterior. The inside is mixed with minced lamb and spices. The minced lamb mixture is stuffed inside the outer shell and deep-fried. The process of making the outer shell usually takes a high level of skill and experience. The kubbe attachment creates the shell in much less time.

    Using the Kubbe Attachment

    • To use the kubbe attachment, start with the meat grinder turned off and unplugged. Locate the cap on the top of the grinder and unscrew it. Set the cap off to one side then look inside the meat grinder and pull out the cutting blade and cutting plate to access the feed screw. Set both pieces of the kubbe attachment on top of the feed screw, wiggling the attachment until it locks into place. Set the cap on top of the meat grinder and screw it in until it forms a tight seal.

    Attachment Identification

    • The kubbe attachment for meat grinders consists of two pieces. The KitchenAid version measures 2 inches in diameter and 1.5 inches high. Depending on the type you purchase, the attachment may be slightly smaller or larger. The pieces typically consist of lightweight aluminum that will not break down or cause any problems in your grinder. When you look at the attachment, you should notice a larger cylinder with a smaller cylinder inside.

    • Wash the kubbe attachment by hand in warm water and mild dish soap. Rinse it off with fresh water and dry it with a soft cloth or let it air-dry overnight. Do not place the attachment in the dishwasher as the high temperature of the water may discolor the attachment and even bend the components. Follow the manufacturer’s recommendations with regard to cleaning and general maintenance of the attachment. Do not use the attachment with any of the cutting blades or attachments as they might damage it.
