Remove all of the foliage from 12 dethorned roses, leaving the stems bare.
Hold four roses in your non-dominant hand, positioned so that their heads are roughly even.
Add the other roses one by one to your hand, surrounding the first four. The first four roses should be the tallest ones in the bouquet. The other roses fill in space beside and beneath them.
Check your posy from all angles to make sure that it has a symmetrical, attractive shape.
Wrap the stems together with floral tape, starting from 1 to 2 inches below the lowest flower and wrapping down the stems to form a handle. The handle of the posy should be large enough for you to hold comfortably in your fist, plus 2 inches.
Nip off the straggling rose stems directly below the wrapped handle using a pair of wire cutters. Cut each stem off one at a time to prevent disturbing the arrangement of flowers above. At this point, the posy is functional, but you can also decorate it further with ribbon.
Cut a 2-foot length of wide silk ribbon, and use it to wrap the handle of the posy. Use a color that matches that of the occasion’s décor, and fold the raw edge of the ribbon underneath to conceal any fraying.
Secure the silk ribbon using floral pins pushed through the ribbon and into the tape and stems beneath.
