How to Clean a Ridged Grill Pan

Ridged grill pans are a boon for cooks who want to grill foods when the weather isn't suitable for outdoor barbecuing. The ridges give meats and vegetables a distinctive appearance but those same ridges can be a problem when it's time to clean the pan. Once the pan cools, cooked food can get stuck on the pan while grease settles into the valleys between the ridges. Ridged grill pans require a different cleaning technique than regular smooth-bottomed pans.

  • Plastic food scraper
  • Coarse or kosher salt
  • Container
  • Nylon scrubbing pad or brush

      Pour water in the pan before it completely cools. Allow the water to sit in the pan and loosen cooked-on foods.

      Use a plastic food scraper to scrape off stuck-on foods. Avoid metal scrapers because they can mar the finish on metal pans and scrape off the coating on nonstick grill pans.

      Mix together enough coarse or kosher salt with water in a container to make a paste if scraping does not remove all stuck-on foods. Dip the nylon scrubbing pad or brush into the salt mixture and scrub the pan, moving the scrubber deep into the valleys.

      Rinse the pan with water and dry thoroughly with the dish towel.
