How to Use Sugar Grapes for Decoration

In principle, sugar grapes are simple. You just add a little egg white and some granulated sugar to grapes. However, the results can be stunning---so much so that these sweet little delicacies can be used to decorate food items as well as your table. These memorable additions to a holiday or birthday table have the advantage of replacing a bouquet of flowers or other decorative element with something edible instead.

Instructions

  1. Cake Decoration

    • 1

      Frost an angel food cake with whipped cream. Use a large spatula to make sure you cover all areas of the cake.

      Place the cake in the refrigerator to chill.

      Prepare the grapes. Wash red and green grapes, and pat them dry with a towel. Don't break them off from the stems.

      Cut small clusters of grapes with scissors. Make sure that each cluster has four to six grapes on it.

      Mix egg whites with water in a bowl and blend with the tongs of a fork.

      Line a baking sheet with waxed paper.

      Dip the grape clusters into the egg white mixture, holding the cluster by the stem. Ensure that the whole grape gets covered with the whites.

      Store the grape clusters on the baking sheet that you lined with waxed paper.

      Sprinkle sugar on each cluster, coating each cluster thoroughly so it appears to be encrusted with sugar. Allow to dry for several hours.

      Take the cake from the refrigerator.

      Place the clusters of grapes on the top and sides of the cake for decoration.

    Centerpiece

      Prepare the grapes with the sugar and egg mixture, and set them aside.

      Dip clusters of mint leaves into the egg white mixture and place them on your baking sheet.

      Coat the leaves with the sugar and allow the leaves to dry.

      Cover a raised cake plate with aluminum foil with the shiny side of the foil facing up. You may have to tape the foil to the bottom of the cake plate to ensure it stays in place; use clear tape.

      Squirt chocolate syrup on the aluminum foil. Make zigzag or swirly designs with the chocolate. Squeeze the chocolate so it extends to just inside the edge of the cake plate. Allow to sit for a minute.

      Arrange clusters of grapes on the cake plate and flank them with the sugared mint leaves. Fill the cake plate full of grapes, but don't overcrowd it--make sure you can see the chocolate syrup swirls.

      Place the cake-plate lid over the sugared grapes and mint leaves for a simple centerpiece for your table.
