Match your gas supply to the type that is used by the griddle before the installation. Light the griddle by following either the pilot safety valve or standing pilot method, according to your specific model.
Turn the griddle on low heat, in the 300 to 350 degree Fahrenheit range, to season it before the first use. Add 1 ounce of cooking oil to the surface per square inch of space. Rub the oil into the griddle with a thin cloth, creating a thin film. Wipe away any excess oil and repeat the process two to three times until the finish is mirror-like.
Turn the knobs to the desired setting about 15 to 20 minutes before it’s time to cook to preheat the griddle properly. Adjust the knobs and burners, with the lowest temperatures on the outside burners, until the heat is uniform across the surface of the griddle.
Scrape off the surface of the griddle with a stiff spatula or griddle scraper after each load of food is cooked. Clean out the grease trough at least once each day, and remove and wash the grease drawer as needed.
