Calibrating Viking Ovens

If you are diligent about following cooking instructions and baking times, but your food is coming out over- or under-cooked, you may need to calibrate your Viking oven. This is the process of determining the actual internal temperature of the oven. Once you know the exact temperature of the oven, you can adjust when cooking. This isn't a highly technical process, and it can be completed in minutes.

Instructions

  1. Knob-Controlled Viking Ovens

      Set your oven to 200 degrees Fahrenheit using the temperature control knob on the front of the unit.

      Place the thermometer in the oven and wait 15 minutes. Remove the oven and take a reading.

      Pull the control knob off of the oven. This will reveal the internal calibration screw.

      Turn the screw slightly counter-clockwise if the oven is running too hot; clockwise if it is running cool.

      Place the thermometer in the oven again and wait 15 minutes. Take another reading. If the temp is still off, repeat the steps until calibration is complete.

    Viking Electric Oven

      Set the oven temp to 550 degrees Fahrenheit and insert the thermometer in the oven. After 15 minutes remove it and take a reading.

      Press the "Bake" button on the control panel of your Viking oven.

      Set the temperature to 550 degrees Fahrenheit.

      Press and hold the "Bake" button within five seconds of setting the temperature. You will then enter calibration mode.

      Use the arrow keys on the oven controls to set the temp in 5-degree increments until the oven temperature matches the thermometer temperature.

      Press "Clear" to exit calibration mode.
