Instructions

    • 1

Look for peppers that are the right size. Italian peppers can range from about 2 to 7 inches in length, but any smaller means the pepper is probably not developed.

    • 2

Test the diameter of the pepper. Unlike other types of peppers, Italian peppers tend to be thin. A diameter of about 3/4 inch is ideal.

    • 3

Check out the color of the pepper. Depending on the variety you're picking, the Italian pepper should be a bright vibrant red, green or yellow color. Peppers with black or brown spots or uneven color should be avoided.

    • 4

Touch the pepper. Italian peppers are crisp and crunchy when raw. The pepper you pick should be firm, with no soft or mushy areas.
