Sage Herb Information

Sage, also known as Salvia officinalis, is an aromatic herb used in cooking and natural healing. Originally from the Mediterranean, sage is now found throughout the world. Today, sage means "wise person" and the name Salvia means "good health."
  1. Appearance

    • Sage is an herb with a sprawling tendency.

Sage, a woody perennial plant consists of oblong gray-green leaves. The color of the leaves is darker on top than underneath. Sage has a sprawling habit and may reach up to 2 feet in height. Tricolor sage has white and purple leaves with hints of pink. Icterina sage has gold and green leaves and Purpurascens has purple leaves.

    Growing

    • Sage may be harvested before bloom by cutting leaves about 8 inches and letting them dry.

Whether you're using seeds, stem cuttings or crown divisions, sage is capable of growing from each of these. When planting sage, be sure to plant it in an area that receives plenty of sunlight and be sure that the soil is well-drained. Heavy, overly wet soil may cause the roots of the plant to rot. Plants should be spaced at least 15 inches apart from one another.

    Uses

    • Sage may be used to stuff turkeys.

Sage may be used in foods, such as a poultry stuffing, or as seasoning for rabbit, pork and fish. Often, sage is used as a tea by steeping the leaves in hot water. Sage also is used as an herbal remedy for menopause and symptoms associated with menstruation. Sage oil, however, is toxic and should not be consumed.
