How to Freeze Borage

Borage, an annual herb, sports blue flowers shaped like stars. Harvest the leaves before the herb blooms. If you cannot use all of your borage at once, freeze some of it. There are two main methods for freezing borage. You can package it in a freezer bag, but freezing it this way will render it useless for garnishes. You can still cook with it, however. Otherwise, freeze pinches of the herb inside ice cubes and use them to garnish your frosty beverages.

Instructions

  1. Freezing

    • 1

      Rinse your borage in cool water and then shake it to remove excess water. Allow the herbs to dry completely.

      Distribute the borage in a single layer on a baking sheet.

      Place the baking sheet in the freezer and allow the herbs to completely freeze. They will feel brittle to the touch when frozen.

      Place the frozen borage in a freezer bag and seal it. Put the herbs back in the freezer. After you have thawed some or all of the herbs for use, do not re-freeze them.

    Freezing for Garnish

      Run the borage under cool running water and shake off the excess.

      Chop the borage coarsely.

      Fill an empty ice cube tray with water until the slots are about three quarters full.

      Drop a large pinch of borage into each ice cube tray slot.

      Place the tray in the freezer and allow it to completely freeze.
