Select a fully grown bell pepper that has ripened to the red stage from a vigorous plant that has produced tasty fruit.
Cut the pepper down the middle from top to bottom with a sharp knife to create two halves, exposing the seeds attached to the internal membrane.
Scoop the seeds off the membrane onto a paper towel. Separate the seeds from each other and leave them to dry out for a few days in a cool, dry area.
Place the dried pepper seeds in a paper envelope, labeled with the date and type of seeds, and store in a plastic bag in the refrigerator.
