How to Store Cilantro Seeds

The leaves of the cilantro plant are use in cool dishes such as guacamole and gazpacho, but the seeds, called coriander, have an entirely different character. Coriander is used in spicy dishes such as curries and sausages. If you are storing seeds from your own plants, let the seed heads dry on the plant until the seeds are no longer green and just beginning to drop from the plant. Snip them off and let them fall in a paper bag where they can finish drying.

      Place the seeds in a clean, dry glass jar and screw on the lid.

      Label the jar so that you won't forget what kind of seeds you have. It's a good idea to put the date on the label if you have more than one jar of seeds; you can use the oldest seeds first.

      Place the jar in a cool storage area out of direct sunlight.

      Monitor for condensation that may collect on the inside of the jar. If this happens, it means that your seeds weren't completely dry. Spread them out on a paper towel in a cool, dry location to dry for about three days, and then pour them back into the jar.
